Lenticchie e salsiccia, Marco's recipe

Marco grew up in England in an Italian restaurant that was run by his parents. He spent many summers in Italy visiting family as a child and he began working with his father in the restaurant kitchen as soon as he was old enough. Marco moved to Whistler to live in the mountains surrounded by the beautiful nature of BC. He works for Arts Whistler and he loves learning about and tasting food from different cultures. He would traditionally eat this dish with my family in Italy for New Years celebrations. Lentils are traditionally eaten for New Years celebrations in Italy. The lentils represent coins and eating the dish is supposed to bring you good luck and wealth in the new year! He remember many happy new years eating this dish and when served with polenta, it’s the perfect comfort food for the cold nights in the mountains!
