Directions
Peel and grate potatoes (get out as much moisture as possible – use a strainer, squeeze
with hands and/or use paper towel)
Grate onion
Wisk eggs
Mix above ingredients together adding in flour, baking powder, salt & pepper.
Heat fry pan (heavy, flat is best) stove top med/high heat (adjust heat as needed) and
Add oil (amount depends on the pan you use and personal preference).
Add a heaping teaspoon of mixture to pan and flatten into pancake/disc with spatula.
Cook about 5 minutes each side until brown, crispy, and cooked through.
Transfer latkes to paper towel lined plate.
Repeat with remaining batter.
When ready to eat, can add apple sauce and/or sour cream on top. You can experiment
with other preferred topping.
