Agedashi Tofu Bowl with Spinach Gomae

Ingredients for 18 pz
Agedashi tofu:
3 packages of medium firm Tofu
1 cup Potato starch
1 cup canola oil
3 pz of green onions
Spinach gomaae:
4 tbsp Tahini
2 tsp Dashi power (fish or kemp)
2 tsp Soy sauce
4 tsp sugar or maple syrup
3 bags of spinach ready to use
2.50 l hot water
Liquid fish dashi:
⅓ cup liquid kemp (vegan) you can also use soy sauce or tamari
⅓ cup water
1 tbsp sugar or maple syrup
2 tsp Dashi power (fish or kemp) omit this step if making vegan option**
Rice:
2 cups sticky white Rice "Kokuho Rice"
2 cups water
Cook rice
Follow the instruction to cook rice in a rice cooker. 2 cups of rice with 2 cups of water. Note that this will be enough for 10 people. reduce ingredients if need it to adjust.
Spinach gomaae
In a big pot add 2.5 lt of water and 1 tsp of salt and boil
Open the spinach bags and add one by one starting carefully and frequently. As the spinach reduces its size you will be able to add the last bag.
keep stirring so the spinach can be cooked evenly. for about 3 minutes
get a big strain and pour the spinach there for removing the water. Let cold water from the tam run over the spicach so we can stop the cooking process. If you can place the spinach in a pot with cold water and then strain again would be better.
When spinach gets cold squeeze it by hand not too hard because we don't want to lose the nutrients but enough for removing the water. Divide it into two bowls
In a bowl mix tahini, soy sauce, sugar, and dashi powder (use kemp for the vegan option) divide into two parts and add into the bowl with the spinach.
Mix very well with chopsticks and by mixing try to break apart the spinach so it gets all the dressing on it
Agedashi tofu
Remove tofu from the package and get rid of the water that comes in it. Place it on a plate and put it into the microwave for about 1.5 minutes. Do the same for the other two packages.
When the time is off drain the water as much as you can.
Cut the tofu square into 8 pz.**Note that 4 pz per person should be enough so remember to reduce the quantities for the spinach, rice and the rest of the sides.
In a pot add 1/2 cup of oil and heat with medium flame. while it gets hot try to remove excess water from the tofu by using a paper towel
Place on a plate the potato starch. then toast a piece of tofu cover it with the starch and then put it in the pot with the oil. reduce the flame so they don't burn. We need to do the pieces of tofu one by one.
While we add the pieces of tofu into the pan we need to turn the tofu so every side gets a golden crispy colour
Liquid fish dashi
In a small pot Mix in a bowl of soy sauce, water, and dashi (or vegan option) sugar. warming up for about 5 minutes we will use this for serving the tofu when gets ready.
Serving
On a plate place rice cooked with spinach gomaae. On a different plate place some liquid fish dashi and then 3 to 4 pieces of cooked tofu and add some chopped green onions. Enjoy!
tip: if you like spicy you can add siracha into the liquid fish dashi for making this spicy.
