Ceviche and papa a la huancaina are two of our most representative dishes.

They are definitely two dishes with a lot of history and where the influence we had from other countries is also reflected. The papa a la huancain represents the great diversity of microclimates that we have in Peru and thanks to that we have more than 4,000 varieties of potatoes. In the case of ceviche, it is our emblematic dish with which we are recognized worldwide.
