Ingredients
Feijoada
2 tbsp olive oil
300 g (2 cup) chopped onion
2 tbsp chopped garlic
2 bay leaves
1 kg chorizo sausage, sliced 1/4-inch thick
500 g black beans
Collard greens
2 cups collard greens, thin sliced
1 tbsp olive oil
Side dishes
1 kg (4 cups) cooked white rice
4 oranges, sliced
Farofa
0.50 cup butter
2 onions
4 slices of bacon (thick if possible)
1 cup chopped walnuts or slithered almonds
1.50 cups raisins
0.50 cup chopped parsley
salt and pepper
1 packet of Yoki (pre-prepared Farofa)
Directions
Feijoada
Soak the black beans overnight. Change the water. Pressure cook for 40 minutes.
In a large heavy-bottom saucepan, add the oil. When oil is hot, add the onions, and garlic.
Add the bay leaves to the pan. Season with salt. Saute for 5 minutes or until onions get soft.
Add the sausage. Continue to cook for 4 minutes. Add beans and enough water to cover the beans. (You can also cook with ham, bacon, pork ribs, and/or salted cured beef).
Bring the liquid to a boil, reduce the heat and simmer until the beans are tender and flavourful, about 1 hour. Add water as necessary to keep the beans covered.
Mash 1 cup of the beans. Season with salt if needed.
Collard Greens
In a skillet pan, saute collard greens in olive oil. Season with salt. If you cannot find collard greens, you can use spinach, kale, or another type of leafy green.
Farofa
Outside Brazil, you can't find the right kind of cassava or manioc flour to make Farofa. You can get it in some Latin-American supermarkets it will be ready-made Farofa from Brazil one example is called Yoki.
Hydrate the raising in warm water for 5 minutes. Drain and put to the side.
In a large skillet/frying pan, fry the bacon until golden brown.
Add the butter and the onion and saute until translucent.
Add the yoki, lower the heat, and keep mixing until it tasts slightly and becomes a nice golden colour. That should take about 5 minutes.
Add the hydrated raisins and the nuts and mix everything together.
Season with salt and pepper and add the chopped parsley.
Serve warm or at room temperature.
This is just one example of what you can put in Farofa. You can put any ingredients you have in with it. Some people add fruits, vegetables, and different meats. Whatever you have in your cupboards.
Serving
On a plate, serve a portion of the beans, a portion of collard greens, and a portion of Farofa. You can also put some orange wedges on the side.
