Mucver (Zucchini Fritters)
Cut up the zucchini, put into a blender and blend.
Mix salt into zucchini.
Put zucchini into a sieve and squeeze out the water.
Chop the onions, put in the blender, add to zucchini.
Chop the spring onion and blend, add to zucchini and onion.
Meanwhile, put enough oil into a pan to cover the fritters to fry, heat the oil on cooktop.
Add the eggs, flour, dill, salt, and pepper.
Stir with spoon, do not mix.
Frying the Mucver
Check to see if oil is hot enough. Drop a tiny bit of the mixture in oil, if it bubbles and rises to the top, it's hot enough.
Using two spoons, create oval shapes approximately 6 cm. by 4 cm.
Place in the oil. Put as many fritters that will fit in the pan.
Fry for about 6 minutes on each side until golden, need to fry for a good amount of time so it cooks all the way through.
Once cooked on both sides, remove and place on a plate lined with kitchen roll to absorb excess oil.
Roasting Cauliflower
Turn oven on to 200 Celsius (392F).
Chop caulifllower into small pieces.
Place in a bowl, mix in lemon juice, oil, salt and pepper.
Put mixture onto a baking tray.
Put in the oven roast for 15 minutes
Yoghurt Dip
Cut cucumber in half.
Grate the cucumber.
Put in a sieve and squeeze out the water.
Place in a bowl.
Add yoghurt, garlic, salt, pepper, and mint then mix.
Place in a bowl to serve, drizzle olive oil on top.
